This chutney is made with onions, whole red chillies, and tamarind, and is finished with a flavourful tadka (tempering). It pairs wonderfully with both idli and dosa.

Brinjal chutney, also known as Vankaya Pachadi, is made with roasted brinjal, tomatoes, curry leaves, and a mix of spices. These ingredients make it a must-try with rice or chapati.

To make this fiery chutney, cook ginger with dals, cumin, coriander seeds, fenugreek (methi), and dry red chillies. Blend it with tamarind and jaggery and finish with a sizzling tadka.
