Pancakes are one of the most popular breakfast treats. True lovers of the dish know that the secret to its greatness lies in its soft, fluffy texture.

Getting that fluffy consistency at home can be tricky. If you want to perfect your pancake craft, here are 5 key tips to keep in mind.

1. Don't over-mix the batter

Over-mixing tightens the batter and diminishes the air bubbles (which determine the fluffiness). Ensure the batter has the right pourable consistency.

2. Let the batter rest

Experts suggest leaving the batter overnight to rest, or at least for 30 minutes. Remember to add baking powder to it for optimum rise.

3. Beat egg yolks and
whites separately

Beat the yolk with the dry ingredients of the batter. Later, just before making the pancakes, add the egg whites to the batter and fold.

4. Flip at the right time

Do not flip the pancakes until you see a bubble on one side. Flip it carefully just once, using a spatula.

5. Use a clean pan

Keep the pan clean and dry every time you make pancakes. Any foreign elements or leftover ingredients sticking to the pan can ruin their taste and/or texture.
