One summer drink that always tugs at heartstrings is chaas. Also called buttermilk, it is widely available across India, with various names and little variation in the recipe.

It is a soulful combination of churned yogurt, chillies, roasted cumin powder, black salt, black pepper and some herbs of your choice.

It gives a smokey makeover to regular chaas. All you need to do is place a small bowl on the container, add burnt charcoal and pour ghee and jeera.
