Luchi is a popular deep-fried Bengali bread, loved for its soft and fluffy texture. If you struggle to make it at home, here are some tips to help you make it perfectly.

The way you knead the dough determines how fluffy your luchi will turn out. Make sure it's neither too soft nor too hard for the best results.

When kneading the dough, always use lukewarm water. This will help make it extra soft and fluffy. Don't forget to add ghee as well.

Once done, cover the dough with a damp cloth and let it rest for about 30 minutes. Skipping this step will make your dough dry.

The way you roll the luchi makes a big difference. Make small balls and cover them with a wet cloth. Before rolling, rub ghee on them.

Before frying, ensure that the oil is hot enough. If it's not, your luchi won't puff up and will lack that distinct golden-brown colour.
