Slice potatoes into 1/4-inch thick fries—the optimal thickness for that coveted crispiness, mirroring the standard in restaurants and cafes.

Pre-cook raw potato fingers in cold water with vinegar and salt for 7-8 minutes. Drain and let them rest on a kitchen towel to remove excess moisture.

Dip pre-cooked potatoes into very hot oil and fry for just 50 seconds. Remove and allow them to cool on a paper towel, preparing them for the next step.

Once semi-fried, freeze the fries in an airtight container until they're firm. This step ensures they hold their shape and crisp up beautifully when fried again.
