1. Boil the Noodles Properly

Make sure you boil the noodles until they're soft but not mushy. Adding a pinch of salt to the water while boiling helps to enhance the flavour.

2. Prepare the Eggs in Advance

When making egg hakka noodles, it's a good idea to prepare the eggs beforehand. Scramble them into small pieces-just not too small.

3. Stir-Fry the Vegetables

Heat some oil in a wok and add your vegetables (capsicum, onion, and carrots). Stir-fry them on a high flame for 2-3 minutes for that perfect crunch.

4. Add the Sauces

Once the veggies are done, toss in the boiled noodles along with vinegar, soy sauce, salt, black pepper, ketchup, and chilli sauce.
