Throw coriander leaves, mint leaves, green chillies, ginger, and garlic into a grinder. Add a splash of water and blend until you get a smooth, vibrant green paste.

Transfer the paste to a bowl, mix in curd and dry spices, and stir until it's all well combined. This is where the magic happens!

Add chicken chunks to the bowl and coat them thoroughly with the marinade. Let it rest for at least 30 minutes so the flavours soak in properly.

Heat some oil or butter in a pan & roast the chicken on low flame until the edges get that beautiful char. You can pop it in a tandoor or bake it for an authentic touch.

Take it off the heat and plate it up with spicy green chutney and onion rings. That's it-you've just made the ultimate party starter!
