While making egg bhurji, use only fresh eggs for a better texture and flavour. Old eggs can affect the fluffiness that you desire in your dish.

Cook onions until light brown. Choose red, ripe tomatoes for a perfect base. Saute them well to balance the sweetness and acidity in the dish.

Egg bhurji is usually bland so use all kinds of spices to flavour it up. Add chopped green chillies and spices to amp up its taste and give it a desi twist.
