When making aloo tikki, make sure to use starchy potatoes. This will ensure that your tikki holds its shape and turns out super crispy.

Mash the boiled potatoes until perfectly smooth, avoiding lumps for a firm texture in your tikki. If there's any lump, the tikki might fall apart.

Dust each tikki with a light, even layer of corn flour to give it an extra crisp coating. This will also form a protective layer over the tikki.

Chill the tikkis briefly in the freezer for about 15-20 minutes to help them firm up and prevent breaking during frying. It works like magic!
