Here are some simple and effective ways to reduce the bitterness. Try these tricks next time you cook karela.

Scrape off the rough surface of the bitter gourd. Use a peeler to make the outer layer smooth - this helps reduce the intense bitterness.
Cut the bitter gourd & remove the seeds before cooking. The seeds carry much of the bitterness, so removing them makes a noticeable difference.

Generously rub salt on the sliced bitter gourd, place the pieces in a bowl, and let them sit for 20-30 mins. The salt draws out the bitterness.

After applying salt, squeeze out the bitter juice from the gourd. Rinse it under running water and squeeze again for better results.
Soaking bitter gourd pieces in diluted yoghurt for about an hour can help neutralise the bitterness.
