While making an appam, it's best to use parboiled rice. This will help give the appam a nice white colour and also enhance its taste.

Before making the batter, soak the rice for at least 5 to 6 hours. If you skip this step, your appam won't be as soft as you desire.

Add coconut milk while grinding the soaked rice is quite beneficial. It makes the appam batter smooth and improves its texture.

You can also add a pinch of baking soda after the batter has fermented. This will give the appams a nice colour and ensure they are soft.

Mix the batter well before making each appam to ensure the rice flour and coconut milk are evenly blended and distributed.

The type of utensil you use to make an appam also matters. For the best results, use a non-stick appam pan to ensure even cooking.
