Bhindi is one of those vegetables that almost everyone has a favourite way of cooking. If you are bored with the usual stuff, this achari bhindi recipe will be your next go-to.

Filled with flavour, this bhindi recipe features a spicy achari twist that simply works. Use this easy recipe to prepare achari bhindi in under 30 minutes.

250 gm bhindi
2 tsp mustard seeds
1 tsp jeera
1 tsp kalonji (onion seeds)
1 tsp saunf
10 red chillies

Pinch of heeng (asafoetida)
Salt - to taste
1/4 cup tomato puree
1/4 cup mustard oil
1 tsp turmeric powder

Wipe the bhindi clean and chop off the top. No need to slice it further unless you want smaller pieces.

Heat 2 Tbsp oil and stir fry the bhindi till it softens and gets lightly crisp. Set it aside for now.

In 1 Tbsp oil, roast mustard seeds, kalonji, saunf, and red chillies till aromatic. Once cooled, grind them into a coarse mix.

In the remaining oil, add jeera and turmeric, then toss in the cooked bhindi and give it a good stir.

Add the ground masala mix, some salt to taste, and finish with tomato puree. Cook till the oil separates.
