Hara bhara kebabs are a lip-smacking option for a party appetiser. Even if there's no special occasion, these veg kebabs are a versatile snack you can make at home.

While hara bhara kebabs are typically pan-fried, you can cook them with less oil if you use an air fryer. Doing so also makes them more wholesome. Check out our special recipe:

1 cup spinach
1 cup green peas
1 boiled potato, grated
1 tsp each of roasted cumin powder, roasted coriander and chaat masala
Salt to taste

2 green chillies, finely chopped
1 tbsp chopped coriander
1 tsp ginger garlic paste
1 tbsp lemon juice
1 cup breadcrumbs

Blanch the green peas and spinach together for 5 minutes. Drain the water and blend them together to form a thick paste.

Transfer the green paste to a large mixing bowl. Add the potato, finely chopped green chillies, coriander leaves and ginger garlic paste.

Add the powdered masalas, salt to taste, lemon juice and breadcrumbs. Combine the ingredients well to get a slightly coarse mixture.

If the mixture feels too wet to shape, add a little cornflour or extra breadcrumbs to it. Make small round flattened patties of the green mixture.

Brush your air fryer basket with oil or line it with parchment paper. Carefully place the kebabs in it and don't let them stick to each other.

Air fry for around 10-12 minutes at 180-190 degrees Celsius. Open the air fryer midway and flip the kebabs. Brush them with a little more oil if needed.

Take care not to overcook the hara bhara kebabs or they'll become dry. They should melt in the mouth. Serve them with green chutney, imli chutney and/or ketchup.
