Want a healthy, easy-to-make snack you can enjoy for any meal? We have a tried-and-tested beetroot cutlet recipe you need to know about.

Made with common veggies and spices, this cutlet is packed with desi-style flavours. You can make a large batch of the base mixture and cook it as needed.

2 cups finely chopped beetroot
1 cup boiled, mashed potato (or swap with cauliflower)
1 cup boiled, mashed mix of carrot, green peas & French beans

1 cup chopped coriander leaves
2 tbsp besan (or oats) for binding
1 tbsp ghee
1 tbsp cashews
10-12 raisins

1 tsp cumin seeds
2-inch ginger, finely chopped
5-6 green chillies, finely chopped
1 tsp chaat masala
1 tsp chilli powder
1 tsp salt, or to taste

In a big mixing bowl, combine the beetroot, potatoes, carrot, green peas, French beans, salt, chilli powder, chaat masala, coriander leaves and besan.

In a pan, heat ghee and add cumin seeds, cashews, ginger, green chillies and raisins. Saute for a minute and then pour it into the earlier veggie mixture.

Mix all the ingredients thoroughly. Form patties/cutlets of the mixture. Brush them with oil. Pre-heat the air fryer.

Air-fry at 190 degrees C for 20 minutes. Flip the cutlets midway for even cooking. Serve them with fresh homemade chutney.
