The easiest butter substitute is neutral oil like sunflower, rice bran, or canola. This allow the tomato and spice flavours to shine.

Nuts can add a similar richness in butter chicken. Soak 8-10 cashews or almonds in hot water for 10-15 minutes, then blend into a smooth paste.
