Spicy, crispy, and full of flavour - kachoris are a delicious tea-time snack. If you enjoy them, try this chana dal kachori recipe. It is packed with aromatic spices.

In a bowl, combine maida, baking soda, salt, and oil. Gradually add water and mix well to form a smooth dough.

Cover the dough with a damp cloth and let it rest for about an hour.

Add chana dal to a food processor and grind it coarsely. You may add a little water if needed.
Heat ghee in a pan and add green chillies, ginger, and cashew nuts. Saute for a minute, then add all the dry spices. Mix well.
Heat oil in a kadhai. Divide the dough into equal portions and stuff each one with the prepared filling, shaping them into balls.

Carefully place the dough balls in the kadhai and deep-fry them until golden brown and crispy. Serve hot and enjoy!
