Chicken saagwala is a winter favourite known for its nourishing spinach-based gravy and gentle spices. It is a comforting Indian chicken curry that blends greens, tomato and slow-cooked meat.

1 chicken cut into pieces
1/4 cup oil
3 cups pureed spinach
1 tsp cumin seeds
1 bay leaf
1 tsp ginger
1 tsp garlic

1/4 cup tomato puree
2 tsp salt
1/4 tsp garam masala
1/2 tsp red pepper
1 tsp coriander powder

Heat the oil and add cumin. When it splutters, add bay leaf, ginger and garlic. Saute till light brown. Add onions and cook till soft. Add chicken on high heat till opaque.

Lower the heat and cook, stirring a few times till tender. Add tomato puree and stir fry till the fat separates. This step builds flavour and depth in the gravy.

Add salt, garam masala and red pepper. Stir well. Add spinach and saute for 2 to 3 minutes. For thinner gravy, add a little water and cook slightly longer.

Turn the chicken a few times and serve hot garnished with cream. Chicken saagwala pairs well with roti, naan or plain steamed rice for a balanced winter meal.
