Love vada pav? Take it up a notch with Chilli Cheese Vada Pav - a fiery, cheesy twist on Mumbai's favourite street snack! Follow this easy recipe to make it at home.

Saute ginger-garlic paste, spices, and mashed potatoes. Add salt, coriander, cool, stuff with cheese, and shape into vadas.

In a bowl, mix besan, baking soda, salt, and water to form a smooth batter. It should be thick enough to coat the vadas.

Slice the pav in half, spread butter, and toast on a tawa. Optionally, spread dry garlic chutney for extra flavour.

Place a hot cheese-stuffed vada inside the pav, add more grated cheese if desired, and serve with chutneys or fried green chillies.
