1. Make Filling

Saute ginger-garlic paste, spices, and mashed potatoes. Add salt, coriander, cool, stuff with cheese, and shape into vadas.

2. Prepare The Batter

In a bowl, mix besan, baking soda, salt, and water to form a smooth batter. It should be thick enough to coat the vadas.

3. Fry The Vadas

Heat oil in a kadhai. Dip each potato vada in the besan batter and deep-fry until golden brown. Drain excess oil on paper towels.

4. Toast The Pav

Slice the pav in half, spread butter, and toast on a tawa. Optionally, spread dry garlic chutney for extra flavour.

5. Assemble & Serve

Place a hot cheese-stuffed vada inside the pav, add more grated cheese if desired, and serve with chutneys or fried green chillies.
