Immerse yourself in the Diwali festive spirit by making mithai at home. What can be a better sweet for Diwali than the traditional Kaju Katli? Here is the recipe:

250 gms cashew nuts, 250 gms sugar, 240 gms milk, a few silver leaves

Blend cashews and milk in a blender to make a fine paste.

Mix this paste with sugar and cook over low heat. Keep stirring till the sugar dissolves, then bring to a boil.

Continue stirring over medium heat, till the mixture leaves the sides of the pan, and becomes a dough-like paste.

Remove from heat and let it cool enough to handle. Roll it onto a greased surface with a greased rolling pin. Roll to 1/4cm / 1/8" thickness.

Cover with the silver leaf and leave to cool completely. Next, cut into diamond-shaped pieces. Serve and enjoy!
