Onam 2024 has begun! People are celebrating the festival with great enthusiasm and delicious food, especially in the form of the Onam Sadhya.

One of the classic components of the Onam Sadhya is avail or aviyal, which is a preparation of mixed vegetables with a coconut base.

While the exact recipe for avial may differ from household to household, we have brought you a beginner-friendly recipe you will love. Try it out for Onam 2024:

3/4 cup Coconut
1/2 cup Curd
1 sprig Curry leaves
1 tsp Coconut oil
Salt to taste
1 tsp Mustard seeds
2-3 Green chillies
Pinch of Turmeric
½ tsp Cumin seeds

Different veggies can be added to avial. Some basic options:
1 Drumstick
Pumpkin 1/4 cup
Ash gourd 1/4 cup
Beans 1/4 cup
Yam 1/4 cup
Tindora 1/4 cup
Carrots 1/4 cup

Cut all veggies to get equal rectangular pieces, around 1.5 inches long. Cook them in a covered pan with water until softened.

Blend coconut, cumin seeds, and green chillies to make a thick paste. If needed, add a little water or curd to improve the blend.

Once veggies are cooked, add the coconut paste to the pan with salt, turmeric, curd and curry leaves. Mix well and cook until you achieve the desired consistency.

Make a tadka (tempering) by adding mustard seeds, curry leaves and dry red chilli to coconut oil. Pour the tadka over the mixed veggies in the pan and enjoy.
