Leftover saag can be turned into a fresh and satisfying meal with just a few everyday ingredients. This easy saag paratha recipe works well for breakfast, brunch, or a light lunch and helps reduce food waste at home.

1 cup leftover saag (any green saag)
1½ cups whole wheatflour
Salt to taste
½ teaspoon red chilli powder (optional)
½ teaspoon carom seeds (ajwain)
Water as needed
Oil or ghee for cooking

In a bowl, combine leftover saag, whole wheat flour, salt, red chilli powder, and carom seeds. Mix well so the saag spreads evenly through the flour for better texture and flavour.

Add a little water at a time and knead the mixture into a soft, pliable dough. The moisture from the saag usually reduces the need for extra water.

Divide the dough into small portions. Roll each portion into a round paratha using light pressure to keep it even and prevent tearing.

Heat a tawa over medium heat. Place the rolled paratha on the tawa and cook on both sides using oil or ghee until properly cooked.

Cook until the paratha turns golden brown with light crisp edges. Serve hot with curd, butter, or pickle for a simple and comforting meal.
