Kadhai Mushroom is a delicious variation of Kadhai Paneer. Mushrooms are stir-fried and cooked with chopped tomatoes, capsicum, and onions. It's a perfect dish for dinner parties.

500g mushrooms (fried to light brown)
3–4 green chillies (slit slightly)
1 tsp ginger paste
1/4 cup oil
2 tsp cumin seeds
2 bay leaves
1/2 tsp turmeric

1/2 tsp turmeric
1 tbsp salt
1/2 tsp garam masala
1/2 tsp red chilli powder
1 tbsp coriander powder
1 tbsp chopped coriander leaves (for garnish)

In a pan, heat some oil. Add sliced onions and capsicum. Sauté together for 5 minutes.

Remove the sautéed vegetables. Add mushrooms to the pan and sauté for 5 minutes until lightly browned.

Add more oil if needed, then add chopped onions. Sauté until they turn translucent.

Now add the ginger-garlic paste and sauté until aromatic.

Add the tomato purée and cook the mixture for about 3 minutes.

Add salt, green chillies, cumin seeds, coriander powder, turmeric powder, red chilli powder, and garam masala. Mix everything well to enhance the flavour.

Add a little water and simmer for 5 minutes. Then add kasuri methi (dried fenugreek leaves) and cream. Stir gently.

Now return the fried onions, capsicum, and mushrooms to the pan. Mix everything well and cook for another 3–4 minutes.

Garnish with freshly chopped coriander leaves and serve hot. Best enjoyed with butter naan or paratha.
