Tired of the usual breakfast options? Try this desi twist on Shakshuka! Packed with protein and spices, it is a flavourful, healthy way to kickstart your day.

2 eggs
1 tbsp ghee
1 green chilli (finely chopped)
1 medium onion (chopped)
1-inch ginger (grated)
2 garlic cloves (minced)

2 tomatoes (chopped)
½ tsp turmeric powder
½ tsp red chilli powder
½ tsp coriander powder
Salt to taste
Fresh coriander leaves (for garnish)

The magic starts here! Heat an iron pan and add a generous spoonful of ghee. Let it melt and get nice and hot – the perfect foundation for flavour.

Time for the good stuff! Sauté chopped green chilli, onion, ginger, and garlic in the ghee until the onions turn a beautiful golden brown and the aromas fill your kitchen.

The heart of the dish! Add chopped tomatoes, salt, turmeric, red chilli powder, and coriander powder. Cook it down until the tomatoes soften into a luscious, thick gravy.

The stars of the show! Crack the eggs carefully into the pan, making sure they have some space. Sprinkle a pinch of salt and fresh coriander leaves for extra flavour.

Cover the pan and let it all come together. Cook until the egg whites are set but the yolks are still runny and delicious.
