Ukadiche modak is a Ganesh Chaturthi staple made in many homes. If you're wondering what to do with the leftover rice flour dough (ukad), we have a delicious idea.

Nivagrya is a traditional way of using leftover ukad. It is a savoury flatbread-like delicacy that can be made using just a few ingredients. Here's the recipe:

INGREDIENTS

1-2 cups of leftover ukad
3 green chillies (chopped)
1-2 tbsp coriander leaves (chopped)
1 tsp cumin seeds
Oil for greasing
Salt to taste

STEP 1

Combine the leftover rice flour dough (ukad) with the chillies, coriander leaves and cumin seeds. Add salt as per your taste.

STEP 2

Form small balls of the mixture and flatten them into discs, similar to thick puris. Steam the flattened pieces for around 15 minutes.

Allow the discs to cool slightly before removing them from the steamer. Top the nivagrya with ghee and enjoy!
