1 cup split urad dal
2-3 green chillies, finely chopped
1-inch piece of ginger, grated
A handful of curry leaves, finely chopped
1/2 tsp cumin seeds
Salt to taste

Rinse urad dal and soak it in water for 4-5 hours or overnight. This step softens the dal for better grinding.

Drain the soaked urad dal and grind it into a smooth batter. Add a little water if needed to achieve the right consistency.

In a mixing bowl, combine the batter with chopped green chillies, grated ginger, curry leaves, cumin seeds, and salt for flavour.

Wet your hands and take a small portion of the batter. Shape it into a doughnut by making a hole in the centre.

Lightly spray the vadas with oil and air fry at 180°C for 15 minutes. Flip halfway for golden brown, crispy perfection. Enjoy!
