We all love delicious and spicy Punjabi chole, but when making it at home, we often can't achieve that authentic flavour. A homemade Punjabi chole masala creates magic in the dish.

If you want authentic flavour and taste in your favourite chole, then prepare this chole masala powder at home. Here are some easy steps to make homemade chole masala.

Start by drying out all the ingredients. If the sun is shining, place them outside for some time to remove any moisture.

Next, dry roast all the spices in a pan. After roasting, allow the spices to cool completely. Don't ever grind them while they're still hot-it'll ruin the flavour.

Once you've roasted all the spices, turn off the heat and add the kasuri methi to the pan. Stir it around to lightly roast it.

Add your roasted spices to a mixer jar. For extra heat, add red chilli powder at this stage. Grind everything into a fine powder.

Glass jars are the best option for storing your spices. They prevent moisture from seeping in and help keep the flavour intact.
