Paratha is that one thing you will always find on the breakfast table in Indian households. There are endless versions to try, and if you are looking to switch things up, give sattu paratha a go.

Sattu is made using roasted chana, and it is packed with protein. Sattu paratha is not only filling but also a solid summer breakfast option to keep things light and healthy.

2 cups Atta
1/2 tsp Salt
1/2 tsp Ajwain
1 tsp Kalonji
1 tbsp Ghee
1/2 cup Water

1 cup Sattu
1/2 tsp Ajwain
1/2 tsp Salt
1 nos Garlic Paste
1 nos Ginger Paste
1 nos Green chilli
1/2 tsp Red chilli powder
1 nos Onion
1/2 tsp Lemon juice
1 tsp Achaar masala
1 tsp Mustard oil
1/2 cup Coriander leaves

Add atta to a bowl. Toss in salt, ajwain, kalonji and ghee. Pour in the right amount of water and knead a soft dough like you usually would for regular parathas.

In another bowl, put the sattu. Add ajwain, salt, ginger-garlic paste, chopped green chilli and red chilli powder. This is the base for your stuffing.

Throw in the onion, squeeze in the lemon juice, mix in achaar masala, a bit of mustard oil and chopped coriander. Mix everything properly using your hands or a spoon.

Add a little water just so the mix becomes slightly moist and easier to fill. Make medium-sized balls out of the dough to start shaping the parathas.

Dust some atta on your rolling surface so that the dough does not stick. Flatten the dough and put a good spoonful of the sattu filling right in the centre.

Seal the edges neatly, press it down gently and roll it out again to shape it properly. Heat your tawa and place the paratha on it to start cooking.

Add a nice bit of ghee on both sides and cook till it turns golden and crispy. Serve your hot sattu parathas with green chutney, curd or mango achar.
