Aam ki launji, also known as aam ki chutney, is a perfect balance of sweet & tangy. Made with raw mango (or kairi), this chutney pairs wonderfully with parathas, bread, or pakoras.

In this recipe, the raw mangoes are cooked with a variety of spices and a touch of sweetness, resulting in a flavour-packed chutney. Here is a special recipe you can try at home.

1 Raw Mango
1 tbsp Oil
1/2 tsp Cumin Seeds
1/2 tsp Fenugreek Seeds
1/2 tsp Fennel Seeds
1/2 tsp Nigella Seeds
1/2 tsp Mustard Seeds

1/4 tsp Turmeric Powder
1/4 tsp Kashmiri Red Chilli Powder
Black Salt, to taste
1/4 tsp Asafoetida (Hing)
Jaggery or Sugar (to taste)

Peel the raw mangoes and cut them into small pieces. You can leave the seeds in if you prefer.

Heat oil in a kadhai (wok) and add the cumin seeds, fenugreek seeds, mustard seeds, and fennel seeds. Saute them until they release their aroma.

Add the mango pieces along with the turmeric powder and mix everything together.

Add the Kashmiri red chilli powder, black salt, hing, and nigella seeds, and cook for a minute or two to let the flavours blend.

Add water, cover the pan, and let it cook on a low flame until the mangoes become soft and mushy.

Once the mangoes are cooked, add jaggery or sugar & stir to combine. If you prefer a slightly runnier consistency for launji, feel free to add a bit more water.

Finally, sprinkle some garam masala powder, mix it in, and turn off the heat.
