Love spicy and tangy sambars? This Andhra-style sambar is bold, comforting, and easy to make. Here's a quick recipe to enjoy with rice, idlis or dosa.

1 cup toor dal
1 small piece of tamarind
1 onion, chopped
1 tomato, chopped
1 drumstick, chopped
1 carrot, diced
2 green chillies
½ tsp turmeric
Salt
6-8 curry leaves

1 tsp cumin seeds
2 dried red chillies
A pinch of hing
1 tbsp ghee
1 tsp jaggery
1 tsp sambar powder

Pressure cook toor dal with turmeric and water for 3-4 whistles. Once soft, mash well and set aside. This will make a creamy base for your sambar.

Soak tamarind in water and extract the juice. Add onion, tomato, drumstick, carrot, chillies, and curry leaves. Boil until veggies are soft and cooked.

Add the mashed dal to the boiling tamarind-veggie mixture. Stir well and simmer for 8-10 mins. Add salt and water, if necessary, as per your taste.

Heat ghee and add mustard seeds, cumin, red chillies, hing and curry leaves. Let them splutter and add this tadka over the hot sambar.

Add a little jaggery and sambar powder. Simmer for 2-3 minutes more. Serve hot with rice, idlis or dosa for a spicy and comforting meal.
