Not all dals require onion and garlic to enhance the flavour, and this Arhar dal recipe is proof. It is simple, comforting and pairs well with roti and rice. Here's how to make it.

1 cup arhar (toor) dal
1 tomato, chopped
1-2 green chillies
½ tsp haldi
1 tsp jeera
A pinch of Hing
2 tbsp ghee
Salt
Fresh coriander leaves

Rinse arhar dal with water until it runs clear. Soak for 30 minutes to reduce cooking time. Drain and set aside for cooking.

Add soaked dal with chopped tomato, green chillies, and haldi along with 2.5 cups of water. Pressure cook for 3-4 whistles. Mash the cooked dal gently.

Heat ghee in a pan and add jeera. Let it splutter and then add hing to the mix. Saute for a few seconds to release the aromatic flavours.

Pour the tadka over the cooked dal. Mix well, add salt and water as desired. Simmer for 5-7 minutes, garnish with coriander leaves, and serve hot!
