How To Make Banarasi Red Chilli Pickle

Ingredients

250 gms red chillies
2 tbsp saunf
1 tbsp mustard seeds
1 tbsp jeera
1 tbsp methi seeds

1 tsp black pepper
½ tsp haldi
1 pinch asafoetida (hing)
1 tbsp dry mango powder
1 tbsp salt
2-3 tbsp mustard oil
2 tbsp lemon juice

1. Prepare Red Chillies

Wash and pat dry large red chillies. Make a gentle slit in the middle and deseed the chillies. Make sure they are dry enough before use.

2. Prepare Stuffing

Dry roast saunf, mustard seeds, jeera, methi seeds, and black pepper. Grind them in a grinder before adding haldi, hing, dry mango powder and salt.

3. Add Wet Ingredients

After making the spice mix, add mustard oil and mix thoroughly. Then pour in lemon juice and combine the ingredients to form a smooth paste.

4. Stuff The Chillies

Carefully using your hand, stuff the prepared masala paste into the chillies. Make sure to stuff it properly but not too much so that it overflows.

5. Sun-Dry

Place the stuffed chillies in a dry glass jar. Leave the jar in the sunlight for 4-5 days for flavours to mingle. Enjoy this delicious pickle with your meals!
