Bihari cuisine is all about bold flavours, and aloo chokha is a perfect example. This mashed potato dish is simple yet packed with smoky and tangy notes.

3 potatoes
2 tomatoes
1 onion
½ cup coriander leaves
1 tsp red chilli powder
1 tsp cumin powder
1 tsp coriander powder
Salt, to taste

Start by boiling the potatoes until they are soft. Once done, set them aside to cool.

Take two tomatoes and roast them over an open flame or in a pan. This gives them a smoky depth that makes all the difference.

Finely chop one onion for some crunch. Also, chop fresh coriander leaves for that burst of freshness.

Once the potatoes have cooled, peel and mash them. Add the roasted tomatoes & mash everything together. Then, mix in the chopped onion & coriander leaves.

Sprinkle salt, red chilli powder, coriander powder, and cumin powder. Mix everything well so that the flavours blend.
