How To Make Crispy Gobi Manchurian

Cauliflower Manchurian, or Gobi Manchurian, is the kind of snack that flies off the plate before anyone asks, “Is that the dry one or the gravy one?”

Whether you are serving it as a starter or sneaking it into your dinner rotation, this cauliflower-based Manchurian has all the makings of a crowd-pleaser.

Ingredients:

Heading 2

1 medium-sized cauliflower (cut into florets)
⅔ cup maida (refined flour)
⅓ cup cornflour
4 tsp oil
2 garlic cloves, finely chopped
1-inch ginger, finely chopped
2 green chillies
1 onion, finely chopped
1 green capsicum (cubed or sliced)
2 tbsp tomato ketchup
2 tbsp soy sauce

Ingredients:

1 tsp red chilli sauce
1 tbsp vinegar
1 tsp sugar
Salt and pepper to taste
Oil for deep frying
Spring onion greens, for garnish
Cornflour slurry (optional, for thickening the sauce)

Step-1

Add the cleaned cauliflower florets to a pan of hot, salted water. Parboil them on medium heat for about 5 minutes.

Drain the water and allow the florets to dry completely. Any leftover moisture can affect the crispiness while frying.

In a large bowl, combine maida, cornflour, salt, pepper and a little water. Whisk it into a smooth, lump-free batter.

Heat oil in a kadhai for deep frying. Dip the florets into the batter, coat evenly, and deep fry them until golden brown and crispy. Set them aside on a paper towel.

In another pan or kadhai, heat oil and add the chopped garlic, ginger and green chillies. Sauté briefly, then add spring onions, chopped onions and capsicum. Stir-fry for a few minutes until the vegetables are slightly tender but still crunchy.

Add soy sauce, tomato ketchup, red chilli sauce, vinegar, and sugar. Season with salt and pepper. Stir well.

Add a splash of water or cornflour slurry to adjust the consistency of the sauce, depending on whether you want it slightly saucy or completely dry.

Add the fried cauliflower florets to the sauce and toss everything together until the florets are well coated.
