From aloo and paneer to methi and gobhi, parathas are much-loved across India. This time, we are making a crispy mixed vegetable version.

This paratha is made with a lightly spiced masala and stuffed with a mix of grated veggies. It is shallow-fried till crisp and served hot.

1 kg whole wheat flour dough
Ghee to shallow fry
1 tsp rock salt
1 tsp red chilli powder
1 tsp garam masala
A pinch each of roasted cumin and asafoetida

1 tbsp grated paneer
1 tbsp peas
1 tbsp grated radish
1 tbsp grated carrot
1 tbsp grated cauliflower sautéed in turmeric

Make small, round portions from the dough for individual parathas. Keep the size medium so the stuffing does not spill out.

Roll one portion into a round paratha. Lightly grease the surface with ghee and sprinkle the masala evenly over it.

Place the veggie mix in the centre. Fold the edges to seal it properly. Press gently to avoid tearing.

Roll the stuffed dough again. Place on a hot tawa. Flip and apply ghee. Fry on both sides over high flame until golden and crisp.

Once cooked, serve hot with sita phal ki subzi, aloo ki subzi, achar or a bowl of chilled raita. Perfect for lunch or dinner.
