Crispy veg nuggets are a fun and tasty way to help kids enjoy vegetables without any fuss. They are crunchy on the outside, soft on the inside, and perfect for snacks or lunchboxes. Here's how to make them easily at home.

2 boiled potatoes (mashed)
½ cup grated carrot
½ cup boiled sweetcorn
¼ cup finely chopped capsicum
½ cup breadcrumbs
2 tbsp cornflour
Salt and pepper to taste
2 tbsp plain flour + a little water (for slurry)
Oil for frying

In a large bowl, add mashed potatoes, grated carrot, sweetcorn, and chopped capsicum. Mix everything well so the vegetables blend evenly with the potatoes.

Now add breadcrumbs, cornflour, salt, and pepper to the mixture. Combine well until it forms a soft dough. If it feels sticky, add a little more breadcrumb to balance it.

Take small portions of the mixture and shape them into oval or round nuggets. You can also use cookie cutters to make fun shapes for kids.
