Ghee podi idli is a beloved South Indian dish. If you want to master the art of making it at home, here's an easy recipe to help you achieve perfection.

Start by dry roasting sesame seeds in a pan. This enhances their flavour and adds a nutty aroma to your podi powder.

Heat some oil in a pan and saute chana dal, urad dal, and peanuts. Cook until they are golden brown, then set aside to cool.

In the same pan, saute garlic, red chilli, and curry leaves. Blend this with the roasted ingredients to a coarse powder, adding hing for flavour.

Heat ghee in a pan and add mustard seeds and curry leaves. Let them splutter to release their aroma and infuse the ghee with rich flavours.

Add 2 tbsp of the prepared gunpowder to the ghee, then toss in the preheated idlis. Mix well to coat the idlis evenly with the masala.
