Spicy and flavourful, egg pakoras are a delight as a teatime snack, especially in monsoon. It tastes amazing with ketchup or green chutney. Here's how you can make it at home.

You will need boiled eggs, besan, rice flour, red chilli powder, turmeric, garam masala, cumin seeds, ginger-garlic paste, green chillies, water, and oil.

In a bowl, mix 1 cup besan, 2 spoons of rice flour, and spices - red chilli, turmeric, garam masala, cumin seeds, and salt. Add water to make a batter.

Boil 4-6 eggs until hard-boiled. Peel and cut each egg into halves or quarters, as per your choice. Set aside and heat some oil in a pan.

Dip each egg piece into the batter, making sure it is well-coated. Handle it gently as the yolks might fall into the batter resulting in uneven egg coating.

Heat oil in a deep-frying pan and gently drop the coated eggs. Fry until golden brown and crispy. Remove the eggs on paper towels to remove extra oil.

Garnish with chopped green chillies and coriander leaves. Serve hot with chutney and a piping hot cup of chai.
