Soak Rice

To make pulao, first wash the rice thoroughly with water 4 to 5 times and soak it for 15 to 20 minutes. Do not soak the rice longer than this.

Cook The Vegetables

Heat oil in a pressure cooker, add chopped onion, whole spices, and green chilies, and fry. After a while, add vegetables and tomato paste and cook for 2 to 3 minutes.

Add Yogurt

At this stage, you can also add half a cup of yogurt. Yogurt helps make the rice fluffy.

Time To Add Rice

Add salt and spices to taste, mix everything thoroughly, then add the soaked rice and mix.

Right Amount Of Water

When adding water, be careful: if you use one cup of rice, add one and a half times the amount of water, i.e., one and a half cups of water for one cup of rice.

Add Ghee To Separate The Rice

After adding water, let it boil. Add two teaspoons of ghee. This prevents the rice from sticking. Add finely chopped coriander and mint leaves and mix.

Lemon Juice Trick

Finally, you can add lemon juice; this also makes your pulao fluffy. Cover the cooker, reduce the heat to medium, and let it whistle. Your pulao will be ready in a few minutes.
