A staple in Indian kitchens, garam masala adds warmth and flavour to dishes. Making it at home ensures freshness and allows you to control spice levels. Here's how to make it:

To make garam masala at home, you need cumin seeds, black peppercorns, black cardamom, whole cloves, cinnamon, bay leaves, ginger powder, and nutmeg.

Heat a pan on medium. Dry roast 2 tbsp cumin seeds, 1 tbsp black peppercorns, 4 black cardamom pods, 10 cloves, 2 cinnamon sticks and 3 bay leaves.

Remove the spices from heat when they become fragrant and let them cool completely. This is important to retain the flavour and aroma of the spices.

Once the spices are cooled, grind them into a fine powder. Then add 1 tsp ginger powder and ΒΌ tsp of nutmeg, and grind again for a fine mix.

Store your freshly ground garam masala in an airtight container. Keep it in a cool, dry place and use it within six months for the best taste and aroma.
