Wash the green garlic well and chop everything-bulbs, stalks, the works. The tender stalks add a nice texture, so don't skip them.

If you like your chutney on the milder side, deseed the green chillies. You can always tweak the spice level based on what you can handle.

Throw the chopped green garlic, green chillies, lime juice, and a pinch of salt into a blender. No need to overthink it — just dump it all in.

Blend until you get a smooth, bright green paste. Take a taste and adjust the salt or lime juice if it feels like it's missing something.

Spoon the chutney into a clean, airtight jar. Store it in the fridge, where it'll stay fresh for up to two weeks.
