Kadhi is one of those comfort dishes you will find in kitchens across India. Every state has its own take, but Gujarat's version stands out for being light, tangy and absolutely heartwarming.

This Gujarati kadhi recipe is a simple curry made with ingredients like yoghurt, gram flour, curry leaves and ginger—basically all the good stuff.

2 1/2 Cup Curd
2 1/2 tbsp Gram flour
A pinch of Asafoetida
A pinch of Jaggery
1 tsp Salt
2 1/2 cups Water
1 tbsp Clarified butter

1/4 tsp Cumin seeds
1/2 tsp Mustard seeds
3 Cloves
1/2 tsp Ginger, chopped
Curry leaves
1 Whole red chill
i3 Green chillies, chopped
Grab a mixing bowl and add curd, gram flour, asafoetida, jaggery, salt and water. Use a whisk to mix everything until smooth.

Heat a pan and pour in the yoghurt mixture. Keep stirring it on medium heat. It should start to thin out into a smooth, soupy curry.

Once the curry starts to thin out, it is time to add the seasoning. Let the whole thing boil for 5-6 minutes so the flavours come together.

Pour it into a bowl and serve hot. This homemade Gujarati kadhi goes really well with steamed rice or khichdi.

In a small pan, heat clarified butter. Toss in cumin seeds, mustard seeds, cloves, chopped ginger, green chillies and the whole red chilli. Let them sizzle and pour over the kadhi.
