Gujarati Sev Usal is a popular street‑style comfort dish known for its spicy ragda and garlicky gravy. This quick version comes together in just 15 minutes and makes a filling snack or light meal.
2 cups boiled peas
1½ cups boiled potatoes
2 tomatoes
2 tbsp garlic
1 onion
1 tbsp red chilli powder
1 tbsp coriander powder
½ tbsp turmeric powder
Salt as per taste

¼ cup water

To prepare the ragda, start by boiling the peas until soft.

Heat a pan and add mustard seeds, hing, onion, and ginger‑garlic. Sauté until aromatic.

Add chopped tomatoes, red chilli powder, garam masala, turmeric, coriander powder, and salt. Cook well.

Add a little water along with boiled peas and potatoes. Cook on low heat for a few minutes.

For the gravy, heat oil in another pan. Add crushed garlic and red chilli powder, then mix in water.

In a bowl, add the ragda, drizzle hot tarri over it, garnish with onions, and serve hot.
