Poha is a classic Maharashtrian breakfast dish that can be prepared in many ways. Here's a healthy version packed with the goodness of vegetables and spices—perfect to start your morning right. Check out the recipe below:

1 cup poha (flattened rice)
½ cup mixed vegetables (beans, carrot, capsicum, and peas), finely chopped
1 onion, finely chopped
1 green chilli, finely chopped
2 sprigs curry leaves
1 tsp coriander leaves, finely chopped
½ tsp mustard seeds
A pinch of turmeric (haldi)

1 whole dry red chilli
Salt and sugar, to taste
Lemon juice, to taste
Sev, for garnish
Oil, for cooking
Freshly grated or desiccated coconut, for garnish (optional)

Heat oil in a pan. Add the whole red chilli and mustard seeds.

When the mustard seeds start to splutter, add the curry leaves, onion, and green chilli. Sauté until the onion turns translucent.

Add the mixed vegetables and cook until they turn soft. Add a little salt while cooking to enhance the flavour.

Rinse the poha under running water, drain well, and add it to the pan.

Add more salt if needed, along with a pinch of sugar and turmeric. Mix everything well and cook for a couple of minutes.

Stir in the coconut (if using). Lower the flame and drizzle in the lemon juice. Mix gently.

Garnish with sev and chopped coriander leaves. Serve hot.
