Start by soaking the tamarind in warm water for about 20-30 minutes. This helps soften the tamarind, making it easier to extract the pulp.

Once softened, squeeze the tamarind to extract the thick, flavourful pulp. Strain it remove the seeds and fibres.

In a pan, mix the pulp with jaggery, cumin, anardana, red chilli powder, and black salt. Add water and cook until the jaggery dissolves.
