Craving some tangy homemade mango pickle but don't want to wait for the long fermentation process? Here is how you can instantly make mango pickles at home.

2-3 raw mangoes, 2 tsp Kashmiri chilli powder, 1 tsp turmeric, 1 tsp salt, 1/4 tsp roasted fenugreek powder, 3 tbsp Gingelly oil, 1 tsp mustard seeds, 1/4 tsp hing.

Wash the raw mangoes properly and chop them into bite-sized pieces. Add salt, mix well and keep it aside.

Heat gingelly oil in a kadhai. Add mustard seeds, and let it splutter slowly. The heat should not be too high.

Add asafoetida, roasted fenugreek seeds powder, Kashmiri chilli powder and turmeric powder, and switch off the gas. Mix it well.

Add the spices mix to the mango. Mix well. Your instant mango pickle is ready! Serve with parathas or any dishes of your choice.
