Khaman Dhokla is a soft, fluffy, and lightly spiced snack from India that is loved for its taste and quick preparation. It is perfect for breakfast, teatime, or a light meal.

1 cup gram flour (besan)
½ cup plain yoghur
t½ cup water
1 teaspoon ginger paste
1 teaspoon green chilli paste
1 tablespoon lemon juice
1 teaspoon sugar
Salt to taste
1 teaspoon fruit salt (eno)

1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
Few curry leaves
2 tablespoons water

In a bowl, mix gram flour, yoghurt, water, ginger paste, green chilli paste, lemon juice, sugar, and salt to make a smooth batter.

Let the batter rest for about 10 minutes so the flavours blend well.

Just before steaming, add fruit salt to the batter and gently mix until it becomes light and fluffy.

Pour the batter into a greased steaming plate and steam for 12–15 minutes until fully cooked.

Check with a toothpick; if it comes out clean, the dhokla is ready.

Heat oil in a small pan, add mustard seeds, sesame seeds, and curry leaves, then add water and pour this tempering over the steamed dhokla.

Cut into pieces and serve warm with green chutney.
