Lauki raita is a perfect accompaniment for summer. Both lauki and curd are known for their cooling properties. This raita is easy to prepare and pairs well with pulao and other dishes.

3 cups water
½ cup lauki, grated
½ tsp salt
1 cup plain dahi (curd)
2 green chillies, finely chopped
½ tsp cumin powder
½ tsp black salt
½ tsp cumin powder (listed twice—ensure if intentional)
Coriander leaves for garnish

Take a bowl of water and add the grated lauki. Stir well.

Add salt, mix, and strain the lauki. Then, add it to the plain curd.

Add green chillies, cumin powder, black salt, and the additional cumin powder (if needed).

Mix all the ingredients thoroughly.

Garnish with coriander leaves and serve this delicious raita with pulao or your favourite biryani.
