1. Get Your Ingredients Ready

Gather all your dry spices. Mix the marinade ingredients in a bowl, add the chicken, & let it sit. Marinating overnight will enhance the flavour & save time.

2. Saute The Whole Spices

Heat ghee in a kadhai or saucepan, then add green chillies, cloves, cardamom, bay leaves, and cinnamon. Let them sizzle and release their aroma.

3. Cook The Chicken Slowly

Add chicken & cook on low to medium heat, stirring occasionally until the colour changes. Slow cooking helps the chicken absorb the flavours.

4. Add Onion-Cashew Paste

Once the chicken is cooked, add onion, cashew, and tomato paste. If the gravy feels too thick, add a little water to adjust the consistency.

5. Let It Simmer

Cover the pan & cook on low heat for about 20 mins. Then, uncover, stir in the heavy cream, season with salt, & let everything simmer for another 5 mins.

6. Garnish & Serve

Turn off the heat, sprinkle fresh coriander on top, and serve with naan or khamiri roti for the best experience.
