Try this unique medu vada made with sooji! Crispy on the outside, soft inside, and packed with spices, it's perfect for breakfast or lunch. Here's how to make it.

1 ¾ cups water
½ tsp salt
1 ¼ cups of sooji
1 tsp cumin seeds
½ tsp ground black pepper
1 green chilli, chopped
4-5 Curry Leaves
1 tbsp lemon juice

In a pan, heat water. Add 1/2 tsp salt and 1 tsp oil. Stir well and bring to a boil. Gradually add sooji. Cook on low flame until it's cooked evenly.

Transfer the cooked sooji to a bowl. Add cumin, ground black pepper, green chillies, curry leaves, and lemon juice. Mix well to form a thick batter.

Grease hands with oil. Take out a small portion of the mixture, flatten it and create a hole in the centre. Make sure the vadas are well in shape.

Heat oil on medium flame. Fry the vadas in batches until they're golden brown. Remove on paper towels to drain oil. Serve hot with sambhar and chutney!
