Meethi Sewai is a classic dessert prepared with milk, vermicelli, dry fruits and khoya. If you want to make this traditional dish at home then check out this recipe with pro tips.

1/2 cup pistachios
1/2 cup almonds
1 packet vermicelliDesi ghee (for roasting)
1 cup milk
1 cup sugar syrup
A pinch of cardamom powder
A pinch of saffron
A handful of khoya

1. Always roast vermicelli in desi ghee for a rich flavour.
2. Use full-fat milk for a creamier texture.
3.Adding khoya enhances the taste and thickness of the dessert.

Blanch the almonds and pistas in water. Blanching not only makes them soft but also makes it easy to peel off their skins.

Boil them for not more than 30 to 45 seconds. While the pistas are blanching, peel the almonds.

Once the skin of the dry fruits starts wrinkling, take them out. Slice them finely.

Once this is done, cook the vermicelli in desi ghee till it gets a brow colour. Now put it in a strainer so that all the excess oil c

Empty the kadhai of all the oil and add milk to it. Once the milk comes to a boil, add the sugar syrup to it.

Now add the sewai and stir gently. Be careful not to break it. The milk will start to soften and cook it. Add the saffron and cardamom powder.

Now it's time to add dry fruits and stir well, followed by khoya. Grate a small piece of it into the kadhai, mix well and serve.
